Avocado pasta

This creamy avocado pasta offers a nice change from the well-known tomato sauce and is just a few steps on your table.

Avocado pasta

You need this:

  • 500 g noodles (eg Bavette)
  • 4 tablespoons chopped parsley
  • 2 ripe avocados
  • 1 untreated lemon (peel & juice)
  • 100 ml of cream
  • some JS avocado topping
  • 4 tablespoons olive oil
  • 1 clove of garlic
  • JS sea salt and pepper
  • 500 g of broccoli
  • 1 teaspoon soda
  • 0.5 tsp salt
  • Parmesan

That’s how it works:

Step 1: First, set up a large pot of water for the noodles and a small pot of water for the broccoli florets. Then you divide the broccoli into florets. You can peel, cut and use the stalk. Now put the salt and the soda in the small pot and cook the broccoli in it for 1-2 minutes. Then take the florets out of the water, the stalk is cooked for about 3-4 minutes depending on the size. Then you can salt the water for the noodles and cook them according to the package instructions.

Step 2: While the noodles are cooking, you take care of the sauce: Halve the avocados first and remove the core. With a spoon, you take out the avocado meat and put it in a large bowl. Add the parsley, the rub, the juice of the lemon, the garlic clove, cream, olive oil and the JS avocado topping and puree the ingredients with a hand blender. Now add about 100 ml of the noodle water. Then you pour the noodles and mix them with the sauce.

Step 3 : Make the noodles with the broccoli florets and gravy and sprinkle with Parmesan. If desired, you can top the noodles again with the JS avocado topping.
