Jalapeño Popper Avocado Toast combines two classics in one delicious dish that’s perfect for breakfast, lunch, or an anytime snack!
So. Today is my birthday! Yay! And, as you might imagine, one of the biggest questions every year on my birthday is, “What will I eat today?” I know I’m not the only one….right?
There’s just something about food that was made for celebrating. I celebrated with good friends and delicious food over the weekend, we’re going out to eat as a family tonight, I have dinner plans with another good friend tomorrow, and Jorden and I have reservations at one of our favorite restaurants Saturday night. Yes, I am eating my way through my birthday, thankyouverymuch. (Is there any other way to do it??)
So naturally, when I woke up this morning, I was already thinking about breakfast. What does one make themselves for breakfast on their birthday? I have to admit – donuts crossed my mind – but at the end of the day, I’m an eggs for breakfast kind of gal. Of course, plain old scrambled eggs on your birthday doesn’t quite cut it. But you know what does cut it? Jalapeño Popper Avocado Toast!
